Different names for the same purpose. Dessous-de-plat is the dictionary term: a support placed on the table to receive dishes. Sous-plat is its exact synonym, and it is actually the most common term used in spoken French. Repose-plat (dish rest) and repose-casserole (pan rest) are common names used, especially when the object holds a cast-iron Dutch oven or a pan straight from the stove.
